Hello! This post will be about what we ate as vegans or the day without being prepared (no vegan butter or milk etc.)
Also thank you to 'Irreversible by 2030' for making this collab!
Our very nutritious breakfast:
Plain toast and smoothie:
Smoothie:
1part frozen strawberries and raspberries
1part water (or coconut milk/soya milk (if available))
1tsp sugar
Mix in a blender
Tip: If too thick add more water
Toast:
Whole grain bread toasted add some strawberry jam (Organic)
Lunch
Vegan Pizza
Ours didn't taste nice but plenty of good recipes can be found here
Dinner
Vegan ravioli and banana smoothie:
Pastry
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat pastry flour
3/4 tsp salt
1 cup water
2 tbsp. olive oil
For the Filling
1 cup raw cashews (soaked in water 4-8 hours, rinsed and drained)
1 small onion
2 quarters garlic cloves (grated)
1/4 cup non- flavored soy
1/2 cup lemon juice
Extra firm tofu ( I skipped this as I am not a great fan of tofu!)
1/4 cup finely chopped fresh basil leaves
1/4 tsp salt
For the Sauce
2 tbsp. olive oil
4 garlic cloves
4 large diced tomatoes (Include juice)
2 tsp granulated sugar
1 pinch of salt
fresh basil leaves to sprinkle
